Turkey Shish Kebab with Tzaziki Salad and Grilled Buns

  • Vilikis Greek type yogurt
  • long English cucumber
  • clove of garlic
  • 1 unsprayed lemon
  • 1 bundle of dill or fennel
  • 600 g ground turkey
  • skewer sticks
  • teaspoon crushed hot pepper
  • tablespoon sweet red pepper
  • a few sprigs of leafy parsley
  • 1 sprig of rosemary
  • small buns
  • olive oil
  • salt and pepper

preparation

  1. Season the Vilikis Greek yogurt with salt, pepper, chopped garlic, a little grated lemon zest, the juice of half a lemon, and chopped dill or fennel.
  2. Rinse the cucumber and slice it lengthwise into four equal parts. Take out the pits and shred them using the rough side of a grater.
  3. Drain the grated cucumber well from excess liquid, preferably with the hand, and add to the yogurt. Add a little olive oil and stir.
  4. Season the minced turkey meat with salt, pepper, sweet and hot peppers and chopped parsley and rosemary. Separate into 8 equal parts and make shish skewers. Fry juicy shish kebabs in a pan or grill.
  5. Halve the buns and drizzle with olive oil, then grill until lightly browned.

Serving

Serve the turkey shish kebab with grilled buns and tzatziki salad and, optionally, with fresh vegetables (purple onions, cherry tomatoes, cucumber strips...).
