Homemade Milk Rolls with Chicken Pâté

  • 560 g all-purpose flour type 550

  • 60 g butter

  • 250 ml milk

  • 2 eggs

  • 1 egg yolk

  • 10 g salt

  • 20 g fresh yeast

  • 1 tablespoon black sesame

  • 1 tablespoon white sesame

  • 1 tablespoon crushed flax

  • 1 teaspoon sugar

preparation

  1. Gently heat the milk, along with a teaspoon of sugar and butter, until the butter is melted. Make sure that the temperature does not exceed 60°C.

  2. As soon as the butter melts, add the eggs and fresh yeast. Keep stirring and allow everything to unite. Combine the mixture with salted flour and knead until a soft dough forms.
  3. Cover the dough in a bowl with a cloth and put it in a warm place for about an hour and a half to rise.
  4. After the dough has risen, transfer it onto a work surface and shape it into multiple small balls. Coat the top of the balls with a mixture of egg yolk and a small amount of milk, then roll some balls in black sesame, some in white and some in crushed flax.
  5. Place the balls side by side in a mould on baking paper. Allow the dough to rest for 30 minutes before baking at 200°C for approximately 30 minutes until they are perfectly golden and have a loose texture.
  6. After baking, use melted butter to glaze the rolls and let them cool.

Serving

Lukewarm pastries are served with chicken pâté.
