Fresh Cream Cheese Cake with Vanilla Crème Anglaise

For the cake:

  • 500 g cream cheese
  • 150 g sugar
  • eggs
  • 40 g all-purpose flour
  • 350 ml whipping cream
  • 1 vanilla bean

For the crème anglaise:

  • 0.5 l cooking cream
  • egg yolks
  • 50 g sugar
  • empty vanilla bean

preparation

Cake:

  1. Beat together the eggs, sugar and flour until frothy.
  2. Cut the vanilla bean in half lengthwise, scrape the seeds with a knife and add it to the mixture.
  3. Add cream cheese and whipping cream and combine together into a compact mixture. Pour the mixture into a square mould lined with baking paper.
  4. Bake at 190°C for 45-50 minutes until the cake becomes golden brown.
  5. After baking, leave to cool, remove the baking paper and cut into pieces.

Crème anglaise:

  1. Heat the cooking cream with the empty vanilla bean. Beat the eggs with sugar and pour over the heated cream.
  2. Return the mixture to the pan and heat it to 85°C. Strain the cream through a fine strainer and let it cool.

Serving

Decorate the cream cheese cake and vanilla crème anglaise with fresh berries and mint leaves.
